Michael Mina runs some of the Valley’s most efficiently effective dining experiences, but when he decided to reinvigorate his Mandalay Bay steakhouse, he tapped former Cosmopolitan chef de cuisine—and Chopped victor—Gerald Chin for the task. All Chin managed to do was incorporate uni-laden bone marrow, black truffle macaroons and his take on the world-famous Bradley Ogden burger onto the menu.
