The Red Rock Resort is adding four new restaurants by the end of the year.

Station Casinos has announced a $35 million renovation project that will bring four new restaurants to its flagship property, Summerlin’s Red Rock Resort. Construction and development is underway with completion set for the fourth quarter of this year. New food will come from Mercadito, a Mexican restaurant concept from Chicago; a small plates concept from Light Group; a new contemporary Italian restaurant replacing the existing Terra Rossa; and a noodle bar concept. The new venues will be built along Red Rock’s Charleston Boulevard entrance complete with outdoor entrances and patios, and the project also includes a new parking section and public drop-off area off Summerlin Center Drive with a connector to the Shops at Summerlin, the new mall under construction adjacent to the resort.

Its menu offers dishes like butter poached lobster and shrimp tacos, crispy duck wings and bratwurst breakfast sliders. Both restaurants are scheduled to open in December in the space currently occupied by the Sporting House, which will close June 3.

When the Las Vegas Foodie Fest returns on April 24-27, it will be at a new venue. The lot across from Luxor on the Strip is the massive food truck festival’s new home. This version of the event will feature more than 50 trucks and vendors from across the country in addition to celebrity trucks from the Food Network, History Channel, Cooking Channel and Travel Channel and representation from MGM Resorts chefs and restaurants.
