What to eat at the new Truck U Barbeque

Former Border Grill executive chef Mike Minor launched his new food truck, Truck U Barbeque, at the Saturday Night Truck Stop/Back of House Brawl at Tommy Rockers on April 5. The hotly anticipated truck had a decent line before Minor’s first-ever service even began. Here’s a look at what you should try off Truck U’s unique Mexican-barbecue menu:

1-pound beef rib This kick-off night special would definitely be Fred Flintstone-approved. Minor was pulling these monsters out of his smoker, slathering them with spicy barbecue sauce and wrapping them in butcher paper. Officially, this was the first item ordered from Truck U.

BBQ torta Truck U’s sandwiches are sure to gain icon status, slow-smoked pork butt or beef short rib with crunchy coleslaw, duck fat fries and Negra Modelo-molasses barbecue sauce on a brioche roll. ($10)

Brisket burrito Similar ingredients show up inside big, warm flour tortillas, slabs of smoky meat with cowboy beans, smoked gouda and Monterey jack cheeses, slaw and fries. ($12)

Short rib fries Another legendary street food in the making? Truck U’s crispy fries are covered with rich beef, blue cheese, barbecue sauce, caramelized onions, bacon and chipotle aioli. Pure fun with a fork. ($10)
